Mexican Pork Chops

  • 6 thick pork chops
  • 3/4 cup long grain rice
  • 1 (13 1/2 oz.) can tomato sauce
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons taco seasoning mix
  • 1 3/4 cups water
  • Salt and pepper to taste

Preheat oven to 350 degrees.

In large skillet, brown pork chops; season with salt and pepper. Place in single layer in 13 x 9 baking pan. Pour rice over the chops. Mix tomato sauce, water, and taco seasoning. Carefully pour over chops and rice. Cover with foil; bake for 1 hour. Uncover; cover with cheese. Bake 15 minutes longer.
